I have low blood sugar after eating a low carb or no carb meal, like steak and green leafy salad.?

with lots of veggies and nuts. i use a lot of olive oil when i cook and i'll add it to my salads. when i include a carb in my meal i don't have a low blood sugar reaction. it's like i don't have enough insulin and when i eat it's depleted. i often get so tired after a high protein meal nothing can stop me from laying down and going to sleep. often happens with salmon. i've had symptoms since i was ten, sleeping a lot for as long as i can remember and three unconscious seizure episodes in my life, the first at ten. i've learned not to go without food and to head that off. instead of carbs making me tired, it seems the opposite is so. i'm trying to figure out how to fix this so i'm not tired all the time.
